FOOD WASTE TRAIN RIDE

This August, Daniella Uslan, a health policy fellow at the University of North Carolina, joined a transcontinental train journey to seven U.S. cities that actively promote local foods, provide healthy food access, support farmers, and advocate for community development. She was looking for ways to prevent food waste and promote food access by connecting them through social entrepreneurship: was there a space for business to recover food that would otherwise be wasted and create a product that is healthy, accessible and affordable? She recently recorded her observations in the Huffington Post.
